Cut eggplants in small pieces(appx. 1 inch).Put them in a bowl in layers adding salt to them.When water
comes out of them,press them and fry in vegetable oil so that they are slightly burnt.Fry onions
in a deep pan, cut carrots in round slices and add them to the pan. Fry for 3-4 min.Cut red pepper in
1 inch slices and also add them there. Fry everything for 5-7 min,add fried eggplants,grinded tomatoes
without skin,salt,add 2 bay leaves,dill.Saute for 25 min,add parsley,garlic and black pepper.Saute for 5 min.
You can eat it cold or hot.
