Purchasing:Choose young, firm, dry pods,tender but not soft no more than 3-4 inches in length. Older
okra is tough and fibrous.Avoid buying okra with dark, brown spots.
Cooking:Okra can be served raw, it can be broiled, steamed, grilled, stir-fried, microwaved, baked and pickled.
Okra, green vegetable of African origin is cultivated for its green pods.
When cooked, it releases sticky thickening substance
that is used for stews and soups.
