Moussaka


2 eggplants(appx.1/2 lb)
1 onion
1/2 lb ground beef or lamb
parsley
4 tomatoes
garlic

Cut eggplants in round slices,fry them in hot oil.You can also salt them
and leave for an hour before frying them ,to get rid of the bitterness.
Fry an onion in a pan, add 2 cloves of crushed garlic and ground beef or lamb.
Add salt,pepper to it and stir well.Fry everything for 10 minutes.
Take it out of the fire and add some sliced parsley.
Take a glass pan and put everything you have in layers: fried eggplants
on the bottom,add salt and pepper to taste,second layer- tomatoes cut in round slices,
third layer-ground beef or lamb.Repeat all the layers,putting whatever is left in layers also.
When you are done with it,put the pan to the oven for 30-45 minutes.
